Recipe: Spelt Pasta

Ingredients:
– 1/4 cup olive oil
– 3-4 scallions, sliced
– 2 cloves of garlic, finely diced
– 3 cups of chopped mushrooms (shiitake and oyster recommended)
– 1 cup chopped parsley
– 1/2 cup chopped basil
– 1/4 cup chopped chives
– Salt and pepper to taste
– Full batch of spelt linguine

Instructions:
Heat the olive oil in a pan and add the garlic and onion. Cook on low heat until softened, then increase to medium heat and add the mushrooms. Sauté until mushrooms are browned, about 8–10 minutes. Season with salt and pepper to taste and serve with the cooked spelt linguine.
